With the holiday season coming to a close, you’re bound to be thinking: What the heck do I do with all this extra food? How do I use it up before I get sick of it? Here’s a “Put a bird on it!” solution: Leftover Casserole. It’s whatever meat you’ve got (turkey, pork, beef, chicken, tofu) slopped together with whatever leftover winter veggies you’ve got, some butternut squash, and a few other fixin’s. Glazed carrots? Green beans? Sweet potatoes? Whatever. Throw em in. Then, “Put a bird on it!” Onion, sage, and a little bit of 2% cheddar can dress up just about ANYTHING. It’s a great way to save time and money on new food by making your leftovers fabulous again, and it’s pretty hard to mess it up. Be adventurous!
½ cup leftover meat (turkey, beef, pork, chicken, tofu, etc)
leftover Vegetable (green beans, carrots, broccoli, or sweet potatoes, for example)
1 Butternut squash
½ cup Onion, minced
1 tsp dried sage, or a handful of fresh sage, minced
freshly ground black pepper, to taste
2 cups reduced sodium chicken broth
2% cheddar, to sprinkle (optional)
1. Preheat your oven to 350 degrees. Coat a baking dish with cooking spray.
2. Heat oil in a large saucepan over medium heat. Add onion and squash, sauté 3 minutes. Add sage and pepper, stir to coat. Add broth and bring to boil.
3. Reduce heat to low, cover and cook 10 minutes, until liquid is reduced. Mix in diced meat and leftover vegetable. Transfer mixture to prepared baking dish and top with just a sprinkle of cheese. Bake, uncovered 30 minutes, or until cheese is melted and bubbly.
